Oral histories
Give testimony.
We're recording conversations with the people who keep chili alive: cooks, judges, families, organizers. Some will become episodes, some a documentary, all of them part of the archive.
Competition cooks
You have competed for points on the CASI or ICS circuit, or you cook behind the store in Terlingua each November.
Judges
You have judged sanctioned cook-offs and can describe the procedure.
Parlor families
Your family runs, or ran, a chili parlor, a Coney stand or a lunch counter with a famous bowl.
Terlingua people
You were there in the early years, or you know someone who was in 1967.
Heirloom recipes
Your family's chili has a story longer than its ingredient list.
Converts
You first ate chili as an adult and remember the occasion.
How it works
Interviews run thirty minutes by phone or video. Subjects review their testimony before publication.
To give testimony or put someone forward, write to the archive with your name, your connection to chili and where you are.
