Spend Smart. Eat Smart. Chili

Midwestern bean-and-tomato chili has no single canonical recipe. This one is published by Iowa State University Extension and Outreach, the state’s land-grant extension service, in its Spend Smart. Eat Smart. program. It is built on the regional baseline of ground beef, kidney beans and tomato.

6 servings of 1 cup · About 20 minutes

A stoneware bowl of elbow macaroni topped with tomato-red chili with ground beef and kidney beans.

Method

  1. 1

Heat a large pot over medium heat. Cook the meat and onion together, stirring, until the meat reaches 165°F, about 5 to 7 minutes.

  2. 2

Add the beans, tomato sauce, diced tomatoes, green chiles, chili powder and garlic powder.

  3. 3

Cook, stirring, for 10 minutes. Stir in 1/2 to 1 cup of water if you want it thinner.

  • The extension notes the recipe is high in sodium and suggests low- or no-sodium beans and tomato products to reduce it.
  • It doubles and freezes well in single portions.
