Champions · Terlingua champion (counted by ICS as its World Championship)

H. Allen Smith & Wick Fowler

The first Terlingua cook-off was a shoot-out between H. Allen Smith and Wick Fowler and was declared a draw. ICS counts it as the first World Championship; CASI and the Original Terlingua group also trace their championships to it.

How they cook

ICS publishes one loose recipe for both men: coarse-ground sirloin or tenderloin, tomato, onion, bell pepper, garlic, oregano, basil, cumin and chili powder or pods. The bell pepper and basil follow H. Allen Smith's published recipe; Fowler's own used chilipiquíns.
